Yeast:

I used a hybrid of the Wyeast 1056 American Ale and Wyeast German
Wheat Ale strains. The yeast slurry was transferred over from a 17
gallon batch of Honey Wheat Ale that I had brewed two weeks earlier.

Notes:

This would make a great 10 gallon batch of Weizen Bock. Nice brown
color. Very malty.

Although this beer is listed as 1st 15 gallon Dunkel it was actually
17 gallons also. I plan on saving at least 1 gallon of slurry.
