Batch Size: 5 gal
Original Gravity: 1.054
Final Gravity: 1.008

Primary Fermentation: 7 days
Secondary Fermentation: 14 days
Additional Fermentation: bottle condition 10-14 days

Grain Bill:

6 lb Muntons Wheat Malt Extract
.25lb Crystal 40

Hop Bill:

2oz Hallertauer Northern Brewer pellets 8.5%
1oz @ 60 min
1oz @ 30 min

Mash Schedule:

dump crystal malt in 1 gal of water and bring to boil stirring frequently. Just as it starts to boil, turn off heat and let steep for a few minutes. Remove grain and add to 1.5 gal of water for boil. Add wheat malt. At hot break add 1oz hops & begin 60min boil. At 30min add 1oz hops. After 60min boil, cool to 70 degrees and add to 3 gal room-temp water in 6.5 gal carboy, shake the crap out of it, and pitch the yeast. Primary ferment for 7 days & secondary for 14 (or less if you want). Bottle and wait about a week.

Brewers Notes:

I had a stuck fermentation on this batch which I thought would suck but it actually brought out a lot of the hop and malt flavor. So, the first week in secondary actually turned out to be the second week of primary fermentation. Anyway, this makes a good, clean, and somewhat hoppy wheat beer.
