2.00 lb. Wheat
2.00 lb. Honey
4.00 lb. BREISS 2 ROW

Hop Bill:

2.00 oz. HALLERTAU U.S. 4.7% 60 min
0.50 oz. HALLERTAU U.S. 4.7% 5 min

Mash Schedule:

Boil temperature of water: 212F
Grain Starting Temperature: 70F
Desired Grain/Water Ratio: 1 quarts/pound
Strike Water: 2.00 gallons of water at 136F
First Mash Temperature: 122F
Second Mash Temperature: 156F
Boiling Water to add: 1.14 gallons

Water Absorbed by Grain: 0.80 gal
Water Evaporated during boil: 1.08 gal
Wort Left in Brewpot: 0.33 gal
Add 4.07 gal of water to yield 5.0 gal of wort

Brewers Notes:

Sometimes the best brews come from the easiest recipes.

I have brewed this beer again and again over the years with great results.

This beer has won two second place ribbons and is damn tasty on a hot day.

Add the honey during the last 10 minutes of the boil, bring the wort back up to a boil and then chill to maximize the honey flavor and aroma.

New Brewers Notes (6/11/97):

I am not a big lover of traditional Wheat beer flavors (clove, banana, etc.). I like them in small amounts but for the most part they just give me a headache.

The WYEAST 1056 gives this beer a wonderful crisp flavor profile that you will hopefully like. I have recently been experimenting with a hybrid mix of

WYEAST 1056 &
WYEAST 3333 (German Wheat)

So far this combo has produced just the right amounts of banana and clove flavors (in my mind anyway)

After some posts on the Breweries BBS asking about honey and when to add it I would like to say that with this recipe you may wish to try boiling the honey for the entire wort boil.

Although when you add the Honey in the last 10 minutes of the boil you will get a bigger Honey aroma and flavor I prefer the longer honey boil for this recipe.

If you where going to make this brew darker I would suggest the 10 honey boil.
