Brewing Method: All Grain
Yeast: 14 grams Yeastlab "Whitbread"
Yeast Starter: None (rehydrated in .5 cup water at 40 C
Batch Size: 5 US gallons
Original Gravity: 1.045
Final Gravity: 1.010
Alcohol Content: 4.8 %
Total Grains: 8.5 lbs

Boiling Time: 100 minutes
Primary Fermentation: 10 days at 70ish F
Secondary Fermentation: primed with .75 cup corn sugar as syrup
Additional Fermentation: n/a

Grain Bill:

American 2 Row 8lbs
Wheat malt .5 lb

Hop Bill:

Perle (5.1) - 2oz - 90 min.
Saaz (3.0) - 1oz - 5 min.
Very ripe fresh whole strawberries (rinsed and degreened) - .5 flat - end of boil

Mash Schedule:

grains mashed with 11.5 quarts untreated tap water (Ocean Beach, CA) for 115 minutes at temp ranging from 63 C to 69 C. Sparged with about 4.5 gallons at 75 C. Starting volume 6.5 gallons, end of boil approx 5 gallons.

Brewers Notes:

An incredible hazy light pink brew that won raves from all (male and female alike). Rather than use a wort chiller I allowed strawberries to steep in wort about 24 hours before pitching yeast. I racked the brew into a glass demijohn about 72 hours later. Final volume was about 4.75 gallons.
This is a great way to take advantage of late summer berries when they're at their cheapest. Your friends will thank you when those late September temperatures are still pushing 100.
