Brewing Method: Partial Mash

Grain Bill:
3.3lb muntons light lme
1.5lb extra light dme
1.0lb crushed 2-row pale malt
Hop Bill:
1 oz. Cascade (alpha 4.1) 50 min.
.5 oz. Northern brewer (alpha 8.8) Dry hopped in the secondary
Mash Schedule:
Mash pale malt in 1 gal water 155 degrees for 30 minutes in a grain bag. Remove bag and bring water to a boil. Remove from heat. Add malt extracts and 3.5-4.0 gal. water. boil 35 minutes. Add Cascade and irish moss. Boil 15 minutes. Cool wort and add enough water to bring to 5.5 gal. Pitch yeast. Primary 7-8 days at 68-70 degrees.
Zest 1 lemon and squeeze juice. Add to 1cup water and boil for 3-5 min. Cool and add to secondary along with .5 oz. Northern Brewer hops. Ferment at 68-70 until airlock bubbles once every 3 minutes. If using pellets, gently swirl carboy every other day to allow hops to settle. Bottle with 3/4 cup corn sugar or 1 1/4 cup light dme.
Brewers Notes:
Secondary fermentation was much longer than anticipated. If you don't have a zesting tool, you can finely chop lemon peel instead.
You could hop it up a bit more if needed. I did not want to overpower the lemon so the hops are light. This is a good summertime lawnmowing beer that is sure to please homebrewer and Megaswiller alike.
