24 oz blueberries mashed with 8 oz corn sugar mashed with a potato masher
gypsum/ NaCl water treatment
Hop Bill:
5 oz Kent Golding's Plug (5 min)
.8 oz Cascade pellets (60 min)
Mash Schedule:
Step mash. Strike with 9.5 quarts at 132 F and protein rest for 30 min. Temp to 150 for approx 15 min then to 157 for approx 20 min or till conversion (20 min worked for me). Sparged with approx 180 F, 19 quarts. Added 1/2 teas Irish Moss at 10 mins to go in the boil. The blueberries were added after the boil was over and after the boil temp dropped to about 189 F. I let this steep for 20 minutes then added the whole thing inluding trub to the fermenter. At bottling, approx 1/2 oz of blueberry extract was added for a little extra flavor ("dry fruiting ?")
Brewers Notes:
This stuff is great. It is crystal clear though blue-brown in color with a definitie purple head. This is probabably our favorite to date. I went light on the blueberries for this first try as I figured I could add a little extract at the end but I sure as heck couldn't take any out if it tasted like "Bartyles and James" later on.
