Brewing Method: All Grain
Yeast: Wyeast 2035
Yeast Starter: 1 Quart
Batch Size: 5 gal
Original Gravity: 1.055
Final Gravity: 1.005
Alcohol Content: 6 + %
Total Grains: 14.9
Color: amber
Extract Efficiency: 75 %
Hop IBU's: ?
Boiling Time: 70
Primary Fermentation: plastic 6,5 gal
Secondary Fermentation: carboy
Additional Fermentation: stainless

Grain Bill:

10 lbs Bress pale malt
,4 0z dark toasted malt,self toasted,,
4 oz crystal 20 self crushed,
I put crushed grist in 40 Quart cooler
every thing together

Hop Bill:

1 oz northren brewers alpha 7% FOR BOIL

1 oz cascade alpha 3.5% LAST 20 MIN

1 oz cascade alpha 3.5% LAST 5 MIN

Mash Schedule:

i HAD A LITTLE TROUBLE REACHING 150 deg
SO MASH TIME MIGHT VARY
I USED 7.5 GAL.
THIS WAS MY 5'th ALL GRAIN
I used single infusion method

Brewers Notes:

FERMENT AT 70 DEG. FOR 1 WEEK
2 ND. FERMENT 2 WEEKS AT 55'DEG'F
3 RD FERMENTATION STAINLESS PEPSI KEG 5'GAL FOR 3 MONTHS

NOTE: THIS WAS THE BEST TASTING BEER AT THE 97 LANCASTER,OH
HOMEBREW DAY FESTIVAL.
IT WAS THE FIRST KEG THAT WAS EMPTY, MOST ASKED ABOUT
