Grain Bill:
Mich. Weyermann Pilsner Malt, 8.5 lb
Mich. Weyermann Vienna Malt, 0.5 lb
Simpson light Crystal, 10 L, 0,5 lb
Hop Bill:
Czech Saaz, 2 oz, FWH
Czech Saaz, 4 oz, 15 minutes
Czech Saaz, 2 oz, 60 minutes
Mash Schedule:
All grains into 6 qt. strike H2O at 57C with .5 tsp gyp., stabilize at 52C for 15 min. Remove 1/3 mash, add 1 pt. boiling H2O & heat for starch conv. at 69C, about 40 min, then boil for 10 min. and return to mash tun for main conv. at 66 C. After 1/2 hour, remove 1/3 mash, add 1 pt. boiling H2O & heat to finish conv. at 72C, about 15 min, then boil for 10 min. and return to mash tun for mashout at 77C. Lauter, sparge with 5 gal H20 at 77C with .5 tsp. gypsum.
Brewers Notes:
Put 2 oz Saaz in muslin bag in empty brew tun, pour wort over bag. Sparge yielded 6.5 gallons. Just before boil, remove FWH. Add 4 oz Saaz in muslin bag 15 min. into boil. Add 1.5 oz Saaz in muslin bag 60 min. into boil. Add 0.5 tsp irish moss at 65 min., at 90 min. chill to 25C. Transfer to primary yields 5 gallons, aerate well, pitch yeast. Drop temp slowly to 10 C.
Primary at 10 C for two weeks, secondary at 5 C for 12 weeks, shaking frequently to release dissolved CO2. Lager another 5 weeks in bottles at 5 C. Raise to ambient for one week.
At these low temps, CO2 will dissolve in the water and slow the fementation. Shaking the wort/beer will relieve the gas pressure and let the yeast work again.
This double decoction recipe is a heck of an effort to clone somthing that sells for about a buck a bottle, but its a nice notch in a homebrewer's tap handle.
