Colonial Lager

Any Australian style bitter kit*
1.5 kg Dextrose
150g Light dried malt extract
10g Cluster hop pellets 4AAU
15g Goldings hop pellets
Wyeast Pilsen lager or 2 packets dried lager yeast

Bring 4 litres of water to the boil then remove from heat. Dissolve into the water the contents of the kit,
dextrose and malt then return to the boil. Add Clusters and boil for 20 minutes, add Goldings and continue to
boil for a further minute. Strain into a fermenter. Makes 21 litres. Pitch either yeast at 22C and ferment
around 14C.
*Don't use Coopers Bitter for this recipe, its too dark and bitter. Serve ice cold with hot damper.
