Yeast: WLP 830 German Lager
Yeast Starter: 1 VIAL ADDED WITH NO PRE-STARTER
Batch Size: 5 Gal US
Original Gravity: 1.058
Final Gravity: 1.012
Alcohol Content: 6% abw %
Total Grains: 12 LBS
Color: NO IDEA
Extract Efficiency: ? %
Hop IBU's: ?
Boiling Time: 60 MIN
Primary Fermentation: 7 DAYS, ROOM TEMP
Secondary Fermentation: 7 DAYS, ROOM TEMP
Additional Fermentation: 14 DAYS, BOTTLE CONDITIONING

Grain Bill:

6 lb Pils Malt Optional: 2oz to 4oz Oak Chips
1 lb Wheat Malt (X 10 min in Boil)
2 lb Rye Malt
1 lb Flaked Maize 1tsp Irish Moss
1 lb flaked rice
1 oz Kent Goldings Mix grains throughly before mashing.
1 oz Galena
1 oz Chinook

Hop Bill:

1oz Chinook X 60
.5oz Galena X 60

.5oz Galena X 30 (Alpha acid levels unknown)

.5oz Kent Goldings X 15

.5oz Kent Goldings X 5

Mash Schedule:

Heat 4 gal hot tap water to about 165F,using more heat or less depending on temperature of the gains and brewery. Stir in 1 tsp of gypsum. Pour to mashtun. Stir in previously WELL MIXED grains. Grains should be evenly mixed. Seal up temp should be 152F. Mash X 60 min. Sparge with 6 gal water heated to 170. Collect 7 gal over a 60 min time frame. 8 Min/gal or SLOWER.

Brewers Notes:

Boil X 60. After hot break, add hops, oak chips, and Irish Moss as listed above. Strain out hops. Chill to 80F. Pour by sterile funnel to room temp glass 7 gal fermenter. Add the vial of White Labs Yeast halfway thru pour to fermenter. Seal with airlock.
Ferment on the coffee table X 7 days. Rack to secondary fermenter. Ferment as above X 7 days. Prime with 3/4 Cup corn sugar.
This is a very "hopped up brew." It is not for the hop uninitiated. Not for BudLite consumers, etc.
