Yeast: Wyeast 2112 Large
Yeast Starter:
Batch Size: 5 gallons
Original Gravity: 1.050
Final Gravity: 1.012
Alcohol Content: 5 %

Boiling Time: 60
Primary Fermentation: 5 days, 65 degrees
Secondary Fermentation: 7 days, 65 degrees

Grain Bill:

6.6 lbs light malt extract syrup (2 cans Munton's Unhopped Light)
1 lb. Light DME
4 oz American Roasted Barley (for red color)
4 oz Biscuit Malt (for body and flavor)
6 oz corn sugar for priming

Hop Bill:

1 oz Northern Brewer (Boiling Hops - 45 minutes)
1 oz Northern Brewer (Boiling Hops - 20 minutes)
1 oz Cascade (Finishing Hops - 5 minutes)

Brewers Notes:

For best flavor, condition at 65-70 degrees for one week, then cold condition for 2-4 weeks after that at refridgerator temperatures. Good to make in the winter - cold condition in your garage at near-freezing temps.

Wonderful red colored Anchor Steam knockoff. Also good made with 8 oz Crystal malt instead of the 4 oz each of red and biscuit.
