Primary Fermentation: 2 WEEKS AT 70
Secondary Fermentation: 2WEEKS AT 70
Additional Fermentation: 2-4 WEEKS AT 40

Grain Bill:

6.25 LBS BRIESS 6-ROW AMERICAN PALE MALT.
2.0 LBS CRUSHED BASMATI RICE.

Hop Bill:

.33 OZ. AT START OF BOIL.
.33 OZ. AFTER 45 MIN.
.33 OZ. AFTER 1 HOUR.
ALL HOPS ARE CASCADE.

Mash Schedule:

BOIL RICE WITH 1 GALLON OF WATER FOR A FEW
MINUTES,REDUCE HEAT AND COVER FOR 30 MINUTES.
ADD GRAIN AND 1.75 GAL.BOILING WATER,BRING TEMP.
TO 150 AND HOLD FOR 3/4 HOUR. RAISE TEMP.TO 158
AND HOLD FOR 15 MIN.
RAISE TO 167 FOR 5-10 MIN.AND SPARGE.

Brewers Notes:

RERUN 1ST. 2GALLONS OR UNTIL VERY CLEAR AT
SPARGE.
COLLECT 6.25 GALLONS TO BREWPOT.
AFTER 1.25 HOUR BOIL,COOL AND TRANSFER TO
FERMENTER LEAVING ALL BREAK BEHIND.
4--4.25 GALLONS OF BEER SHOULD BE COLLECTED
WHICH WILL BE MIXED WITH COOLED,BOILED,WATER
AFTER FERMENTATION.THIS SHOULD RESULT IN AN
ALCOHOL CONTENT OF APPR. 4.4
