Yeast Starter: 1 qt

Boiling Time: 70 mins
Primary Fermentation: 8 days

Grain Bill:

10 lbs Briess pale malt
1 lb crystal 60L
2 lbs flaked barley (toasted in oven)
1.5 lbs roast barley
.5 lb Special B
.5 lb chocolate
2 lbs brown sugar
1 lb dark DME

Hop Bill:

2 oz Galena 13.4% - 60 mins
.5 oz Yakima Golding 2.1% 10 mins
.5 oz Willametter 4.4% 10 mins
.5 oz Yakima Golding EOB
.5 oz Willamette EOB

Mash Schedule:

1.25 quarts per pound
30 mins @ 122
60 mins @ 149

Brewers Notes:

Bottled with 3/4 cup corn sugar and fresh starter of Wyeast 1056.

It took a while for this to mellow out, but after about 10 months it tasted awesome.

In competition at 6 months it was described as somewhat thin...at 10 months in a large group tasting NO ONE thought it was thin...the fusels may have contributed to the thin perception before they mellowed some.
