Yeast: Pasture Champagne
Yeast Starter:

Original Gravity: 1.111
Final Gravity: 1.039
Alcohol Content: 9.5 %
Total Grains: 14 pounds
Color: 50
Extract Efficiency: 88 %
Hop IBU's: 74
Boiling Time: 2.75 hours
Primary Fermentation: 30 days @ 65 F

Grain Bill:

12 # Two Row
11 oz 60L Crystal
6 oz Chocolate
6 oz Black Patent
9 oz Wheat

Hop Bill:

1 oz Hallertau Northern Brewer Plug (7.8%) 60 min.
2 oz Fuggle Plugs (3.6%) 60 min.

Mash Schedule:

Mashed in with 18.7 qts. at 163 F. Temp at 5 min of stirring 150 F. Mashed for 1 hr 10 min. Raised to 168 F over 10 min. Rest at 168 F for 15 min. Put in sparge bucket and stirred then let rest for 10 min. Sparged with 18.7 qts. took 1.5 hrs to sparge after recirculating about 1/2 gallon.

Brewers Notes:

At 11 months the beer was really smoothing out.
Used 1/2 cup corn sugar boiled in water then cooled for batch prime. Recovery based on 35 points for two row, 36 points for wheat, and 24 point for remainder of grains (spg points/pound/gal)
