Cole O'Brien's Stouty Surprise

Extract Recipe for 5 US Gallons

Ingredients:
1 Can Alexander's light extract
1 Can Bierkeller Light extract
1 lb flaked barley
1 lb roasted barley
1/2 lb wheat
15 AAU's Willamette
1/2 stick brewer's licorice
Irish Ale yeast
3/4 cup corn sugar plus 2 tablespoon table sugar for bottling

1. Heat 1 1/2 gallons of water to 155F.
2. Steep grains for 45 minutes and remove using strainer or nylon bag.
3. Remove pot from heat, add extract, and stir until dissolved.
4. Add water to 2 1/2 gallons.
5. Add hops and boil 60 minutes.
6. Add licorice 40 minutes into boil (with 20 min remaining)
7. Cool in wort chiller and pitch yeast.
8. Primary ferment 6 days in plastic @ 68F (skimming kraeusen)
9. Secondary ferment 12 days in glass @ 68F
10. Bottle and age 4+ weeks

This beer has excellent mouthfeel from the flaked barley and a wonderful
head due to the yeast. The licorice gives it a wonderful roundness to
complement the coffee-like bitterness of the roasted barley. Hopping
is just about right. Next I make it I'll sour two bottles of this batch
and add it to the boil.
