This beer is an excellent stout for those of you who like the darker beers, and all the
bitterness that goes with them. This beer is very full bodied, with a great creamy head.
This is a very smooth beer.
For 5 Gallons of Arctic Dwellers Stout:
7 lbs malted barley (british 2-row will do)
1 lb flaked barley
1 lb roasted barley
1/4 lb black patent
2 tsp gypsum
1/4 tsp salt
1-1/2 oz Hallertauer hops for boiling 6 HBU
1-1/2 oz Tettnanger hops for aroma
1 package of Ale yeast.
Add all the grains, salt, and gypsum to 2.5 gallons of water at 168 degrees F. Mash at 150 degrees until fully coverted. Sparge with
4 gallons 170 degree F water, add the boiling hops and boil for an hour. Add the finishing hops and boil for an additional 10 minutes.
Cool the wort with a cooler, and add the yeast. Bottle when the fermentation is done, and let it sit in the bottles for at least 1 month
before drinking. It gets MUCH better with time. ENJOY!
