Brewing Method: Extract
Yeast: White Labs Edinburgh Yeast
Yeast Starter: -
Batch Size: 5 gal US
Original Gravity: 1.068
Final Gravity: 1.021
Alcohol Content: 8 %
Total Grains: 18 oz US
Color: 250
Extract Efficiency: %
Hop IBU's: 23
Boiling Time: 120 min
Primary Fermentation: 2 weeks
Secondary Fermentation: none, although recomended
Additional Fermentation: bottle for 4 mo.

Grain Bill:

9.9 lbs. John Bull Light Malt Extract
8 oz roasted barley
8 oz victory malt
2 oz peak smoked malt
- used only half of normal priming sugar for low carbonation called for in style

Hop Bill:

1 oz Kent Goldings Hops (120 min boil = 23 IBU)

Mash Schedule:

Steeped grains until just before boil.

Brewers Notes:

Due to the lack of a second fermentation and the huge gravity of this beer, it ended up being a bit too carbonated for the style - and well, any style for that matter. Explosive discharge should best be avoided by using a second fermentation or aeration system/yeast nutrient.
The flavor needed to mellow for a full 4 months before the yeast harshness was gone. With aging, the smoked element also began to appear.
