Yeast: RTP Scotch Ale
Yeast Starter: 1 qt
Batch Size: 5 US Gallons
Original Gravity: 1.056
Final Gravity: ~1.014
Alcohol Content: 5.4 %
Total Grains: 11.75 US pounds
Color: 29.9
Extract Efficiency: 75 %
Hop IBU's: 26.8
Boiling Time: 60 mins
Primary Fermentation: 9 days 72F down to 66F
Secondary Fermentation: 5 days at 68F
Additional Fermentation:

Grain Bill:

10lbs Pale Ale
.75lbs Crystal 120L
.50lbs Crystal 60L
.25 Special Roast
.25 Peated Malt

Hop Bill:

1.00 oz Fuggles 4.6%AA 60 mins
1.00 oz Fuggles 4.6%AA 30 mins

Mash Schedule:

Single infusion @ 158F for first hour, 150F for second hour
Mash out at 175 for 10 mins

Brewers Notes:

Boil one gallon of first runnings down to maximum of one quart and add to last ten minutes of main boil.

Cool, aerate and pitch yeast.

After fermentation, I conditioned with 1/2 cup of honey and bottled.

This brew took third place in a competition. I probably would have done better if I had entered it in the right Scottish Ale sub category. I really like this one. Enjoy!
