Brewing Method: All Grain
Yeast: EDME Dry
Yeast Starter: 2 packs in 1 pint of 100*F tail runnings
Batch Size: 6 US gal
Original Gravity: 1.052
Final Gravity: 1.014
Alcohol Content: 4.9 ABV %
Total Grains: 11 3/4 US pounds
Color: 30+
Extract Efficiency: 75 %
Hop IBU's: 39
Boiling Time: 60 minutes
Primary Fermentation: 8 days@70*F
Secondary Fermentation: 10 days@70*F
Additional Fermentation: 3 days with Polyclar

Grain Bill:

9 lbs Briess 2 row
1 lbs Special B Belgian
1/2lbs 10*L Crystal
1/2lbs 120L Crystal
1/2lbs Chocolate Malt
1/4lbs Black Patent

Hop Bill:

3/4 oz Galena(13%AA)whole leaf, for 60 min
1 oz Fuggle(4.4%AA)whole leaf, for 15 min
1/2 oz Casscade(5%)whole leaf, at end of boil(This is optional)

Mash Schedule:

1 qt water/lbs of grain
Single infussion mash@152*F for 90 min.
Sparge down to 1.010 and rehydrate the dry yeast with these tailings.

Brewers Notes:

Don't forget that you will lose about 1 gal/hour to the boil. so make sure your boil starts with at lest 7 gallons of wort in the Boil kettle.

I add the Cascades because I like them.
