6 lbs Dark dry extract
1 lb honey
1/4 lb roasted barley
1/4 lb chocolate malt
2/3 lb black patent
Hop Bill:
1.5 oz Bullion 9.1%aa (boil)
1 oz Tettnager 3.9%aa (finishing)
Mash Schedule:
Add crushed grains to 1 gal water at 170F and steep for 1 hr at abt 150-155F;
Sparge into boil pot to make about 2 gals.
Add dry extract, honey, and Bullion hops - boil for 45 min.
Add 1tsp Irish moss - boil 15 min.
Add 1 oz Tettnager hops - boil 1-5 min.
Strain into cold water in primary fermenter to make 5gals (+/-) and pitch yeast at about 75F.
Rack to secondary fermenter after about 1 week and bottle with 3/4c priming sugar when you think fermentation is done.
Brewers Notes:
This turned out to be a very nice porter with hints of honey and not too on the sweet side. You can increase the hops if you like more hoppy/bitter beer (Northern Brewer and Chinook are both nice for added bitterness in the boil). I am also going to try adding rasberries to the primary fermentation. I have made other Rasberry enhanced beers and they turned out well. Use 2-6c Rasberries; freezing them first is very effective in rupturing the skin without crushing the seeds. You can also use 1-2 pkgs of frozen rasberries (We grow our own). Experiment! It's almost impossible to make bad beer (read Charlie Papazian's book! relax, have a home brew!):)
