6 lb Munton's Dry Pale Extract
1/2 lb Crystal 40
3 oz Cascade hop pellets
White Labs California Ale Yeast

I was fairly drunk when I brewed this, so a lot was left out in my record of it, but this is the best beer I've made to date... The irony is thick.

Anyway, dump the crystal malt into 1 gal of water. Just before boil, remove the malt and dump the now-brown water into another gallon of water in your brewpot. Just after hot break add 2 oz Cascade hops and boil for 50 minutes. At 50 minutes, add 1 oz Cascade hops and boil for another 10 minutes. Cool and strain into 6.5 gal carboy. For primary fermentation I normally fill to 6 gallons. Ferment for 10-14 days. Rack to secondary for another couple weeks. Bottle with 1 1/4 cup of Munton's Dry Pale Malt Extract as primer (not corn sugar) in 1 pt of water. Bottle and let condition for a couple weeks and it's money. ;-)

Notes:

I use filtered water when I brew. Nothing special, just my Britta pitcher.

There's not a lot of kick to this beer but it's tasty... Don't expect it to buzz you all that much.

Next time I brew this, I'm going to either add more or different finishing hops or dry hop it... Not sure at this point.
