Brewing Method: All Grain
Yeast: Wyeast 1056
Yeast Starter: Yes, more is better
Batch Size: 10 Gallons
Original Gravity: 1.054
Final Gravity: 1.012
Alcohol Content: %
Total Grains: 20.5 Pounds
Color: 8.3
Extract Efficiency: 75% a good guess %
Hop IBU's: 43.4
Boiling Time: 90 min total
Primary Fermentation: 7 days@65
Secondary Fermentation: A few weeks at least
Additional Fermentation:

Grain Bill:

17.5 lbs two row
1 lb malted wheat
2 lbs 40 degree crystal

Hop Bill:

1oz. Perle pellet 7.35% 60 min.
1/2 oz. Perle pellet 7.35% 30 min.
1oz. Cascade pellet 5.65% 30 min.
1oz. Cascade whole 6.05% 15 min.
1oz. Cascade whole 6.05% 5 min.

Mash Schedule:

Infusion mash at 152 for 60 minutes. I add 1 tsp gypsum to mash water. Lake Erie water is kinda soft, so I could add more.

Brewers Notes:

Perle seems to work good for bittering. But use whatever you want for bittering. Dry hop with 1oz. Cascade flowers per 5 Gallons, or Williamette, or whatever you want. But dry hop it for sure. The IBU`s on this recipe are on the lower side, so kick it up a notch if you want. Some biscuit malt or other flavor malt would add something. I`ve brew this more than anything else, and it always turns out good.
