1/2# caramalt or crystal malt grain
2oz chocolate malt grain
45g Cascade hops (40 mins boil)
25g East Kent Goldings hops (last 10 mins)
Ale Yeast
Put grains into 1 gallon of cold water and bring to a boil. Strain out
grains and add malt extract and another 2 gallons of water. Bring to a
boil and add Cascade hops. After 30 minutes add EKG hops. Boil 10 more
minutes and remove from heat to rest for 15 minutes. Add to 2 gallons
of cold water in a primary fermenter and cool to 75F. Pitch ale yeast
and ferment at 60F for 1 week. Rack to secondary for 1 week and bottle
or keg, priming with 2/3 to 3/4 cup of corn sugar.
