Grain Bill:

--9 lbs. Klages Malt
--1 lb Light DME
--1/4 lb. Caramunich
--1/2 lb. Crystal 60*L
--1/2 lb. Crystal 20 *L
--1/8 lb. Chocolate Malt
Roast 2 lbs. of the Klages @ 375*F for 40 minutes

Hop Bill:

--3/4 oz Pride fo Ringwood 6.9% AAU's 45 min.
--1/2 oz Mt. Hood 3.0% AAU's 45 min.
--1/2 oz Mt. Hood 3.0% AAU's 5 min.
--1/4 oz Pride of Ringwood 6.9% AAU's 5 min.

Mash Schedule:

Grain/Water Ratio 1 quart/pound
Strike Water 2.84 gals. @ 177*F
Temp. of Grist 156*F
Hold 156*'s for about 75 minutes

Brewers Notes:

Add 25ml of Hazelnut Extract(NOIROT EXTRACT) to the secondary Fermentor.
Irish Moss with 20 minutes left to the boil.
Roast 2 lbs. of the the Klages Malt @ 375 for 40 minutes.
