All Grain
O.G. - 1.055
F.G. - 1.015

Ingredients:
10 lbs Klages
.5 lb Crystal 20L
.3 lbs Carapils
4 oz Chocalate
.5 tsp gypsum ( mash water)
1 tsp irish moss ( 10 min boil)
1.5 oz Northern Brewer Pellets (60 min)
1 oz Kent Golding (20 min)
1 oz Kent Golding (5 min)
Wyeast 1056 ( 1qt water/ .25 lb DME starter x 24 hrs)


Single step infusion. Strike 172 F with 12 quarts. Mashed approx 45 minutes at 157 F till complete conversion. Sparged with 5 gallons at 170 F. Boil 60 minutes. Cooled to 65 F. I sparged 5.5 gallons off the trub. Pitched yeast. Fermentation within 24 hours. Racked to secondary at seven days and bottled seven days later with a little more than 3/4 cup of corn sugar ( I add a little extra because I like to drink my brews cold). Brew had an excellent malt flavor and dry finish. Hop tastes came in three stages - an American Ale knock your socks off aroma followed by a delicious flavor and ending with a definitive Northern Brewer Bitterness. The IBU calculation was 55 and if your not as inclined to having a distinct bitter finish I would back off on the Northern Brewer to about 1 ounce.
