(this is not exactly a traditional Brown ale!...Its better)
6-7lbs unhopped amber malt extract
2.5-3# unfiltered unmolested honey
3oz 5% alpha acid hops Williamette or Cascade will do
.5lbs chocalate malted grain
.5lbs crystal malted grain
1tsp irish moss
liquid yeast culture for 6 Gallons (I think Wyeast is the best)
Makes 6 Gallons
Steep: grains
Boil: ambermalt, honey and 2oz of hops in about 3-4 or
6 gallons of water (whatever your brew pot can handle)
at 45min into the boil add irish moss and at 55min
into the boil add the remaining 1oz hops. remove
from stove at 6Omin.
Cool: to about 75 degrees and place in the fermentor, add water
if needed to make 6 Gallons
Initial Gravity = 1.056
Pitch the yeast then....wait,wait and wait then bottle.
Final Gravity = 1.010
I prime with a cup of corn sugar, but whatever. You could use
more honey or have saved some wort. Now give it about 2 weeks
to make some bubbles and enjoy.
its ready to enjoy
