Brewing Method: All Grain
Yeast: White Labs California Ale Yeast
Yeast Starter: 1500 ml
Batch Size: 10 US Gallons
Original Gravity: 1.060
Final Gravity: 1.020
Alcohol Content: 5.9 %
Total Grains: 20.5 lbs
Color: 10.0
Extract Efficiency: 70 %
Hop IBU's: 55
Boiling Time: 80 Minutes
Primary Fermentation: 70F for 7 days
Secondary Fermentation: 70F for 10 days

Grain Bill:

16.0 # Klagas 2 Row Pale, 2L, Great Western
2.0 # Cara Vienne (Crystal) 19-27L, Dingeman
2.0 # Gambrinus Honey Malt, 15-20L
0.5 # Cara Pils - 6-9L, Dingeman

Hop Bill:

6 oz (Czech) Zatec Bor pellets 9-10% AA (80 minutes)
3 oz (Czech) Zatec Sladek pellets 7-9% AA (15 minutes)
3 oz (Czech) Zatec Saaz hop pellets 3-5% AA (0 minutes)

Mash Schedule:

Mashed in a single infusion at 152F for 70 minutes. Sparge at 170F. Use charcoal-filtered tap water.

Brewers Notes:

Used 1.5 cups priming sugar (corn) while kegging. Let mature in kegs for 2 weeks. This beer is very smooth with a nice aroma. More, please!
