Brewing Method: All Grain
Yeast: 1028 London ale
Yeast Starter: pitch packet to 300cc starter, pitch again to 1000cc more starter, onset in less than 4 hrs.
Batch Size: 5 gal US
Original Gravity: 70
Final Gravity: 17
Alcohol Content: 6.7 abv %
Total Grains: 14.5 lbs
Color: 11.8
Extract Efficiency: 68 %
Hop IBU's: 59.7
Boiling Time: 60 min
Primary Fermentation: 5 days/71F
Secondary Fermentation: 14 days/66F
Additional Fermentation:

Grain Bill:

12.5 lb HB Maris Otter 2 row pale (accept no subs)
1.0 lb HB Crystal 17L
1.0 lb Briess Carapils

Hop Bill:

1.5 oz whole Chinook 8% @ 50 min.
1.0 oz whole Chinook 8% @ 5 min.
1.25 oz whole K-G 4.5% @ 1 min.
1.0 oz pellet K-G 4.5% upon transfer to secondary.

Mash Schedule:

infusion in 10 gal igloo.
3.6 gal @ 177F, rest 60 min around 150F.
sparge with 4.2 gal.
boil 1 hr.

Brewers Notes:

gypsum as neccesary.
silica if you don't like haze.

heaviest OG and highest IBU to remain in cat 5b-IPA's.
if i was sailing around the horn, i would definitely want this.
