Brewing Method: All Grain
Yeast: 1028 London
Yeast Starter: 3rd gen, slurry from 2 liters
Batch Size: 5 US gallons
Original Gravity: 1060
Final Gravity: 1014
Alcohol Content: 4.6 ABW %
Total Grains: 12 lbs
Color: ca. 8
Extract Efficiency: 70 %
Hop IBU's: 60
Boiling Time: 90 minutes
Primary Fermentation: 6 days at 66
Secondary Fermentation: 11 days at 66
Additional Fermentation:

Grain Bill:

11 lbs Maris Otter pale
4 ozs 90 crystal - Durst
4 ozs 20 crystal - Durst
4 ozs DWC Aromatic
4 ozs Victory

Hop Bill:

1.5 ozs Challenger pellets 7.9% for 60
.5 oz Challenger (same) for 15
1.5 ozs Fuggles pellets 5.1% for 15
1.5 ozs EKG pekkets 6% at finish

Mash Schedule:

Single infusion at 152 for 60 minutes.

Brewers Notes:

A good IPA in my opinion, in the English style, not the paint removing bitterness of many of the American versions. This was one of my first batches using the Challenger hops and I was pleased with the results.
