Hosehead Red IPA

This is an all extract recipe, with specialty grains. One 4# can Alexanders light syrup, 4# Bries light DME, 1# brown sugar, 1# 60L crystal. Steep crystal for thirty min. in near boiling water, then remove bag. Bring to boil, then turn heat down and add syrup and DME. Stir well and bring to boil. Add 2oz Galena pellets. Boil forty five min., then add 2oz East Kent Goldings pellets. Let boil 15 min, then add 1oz East Kent Goldings pellets and turn off heat. Total boil 45min. Let it cool to pitching temp, then pitch starter made with Whitbread dry ale yeast and leave in primary for one week. Rack to secondary and add 2oz East Kent Goldings. Leave in secondary for two weeks at cellar temp, then put in cold storage for one week at 35 to 40 deg. Bottle with 2/3 cup corn sugar and let condition for two weeks. Five gallon batch. Enjoy!
