Brewing Method: Extract
Yeast: 1 pkg Edme Ale Yeast
Yeast Starter:
Batch Size: 5 U.S. Gallons
Original Gravity: 1.048
Final Gravity: 1.010

Boiling Time: 45 minutes
Primary Fermentation: 8 - 11 days

Grain Bill:

6.6 lbs (2 cans) John Bull light malt extract
1/3 lb 40 degree Lovibond crystal malt

Hop Bill:

1 Ounce Bullion hops (9% alpha acid) at beginning of boil
1/2 Ounce Kent Goldings hops at end of boil

Mash Schedule:

Lightly crack crystal malt and place in a "hop sock" or small grain bag. Put the grains in the cold brewing water and turn on heat. Remove the used grains just prior to full boil.

Brewers Notes:

To keep it easy, bottle after primary fermentation using 1/2 cup of corn sugar. Try after 5 or 6 days in the bottle, if you're in a hurry (2 weeks from brew pot to mug!). It'll be better after a few more weeks.
