3.3 lbs Alexander's Pale Malt Extract
3.3 lbs Alexander's Wheat Malt Extract
8 oz malted wheat
1 oz bitter orange peel (dried)
1 oz fresh orange peel
1 oz corriander
1 oz grain of paradise
1 bag camomile tea
Hop Bill:
0.5 oz Saaz hops (60 min boil)
0.5 oz Saaz hops (5 min boil)
Mash Schedule:
Grain was steeped in 3 gallons of water and removed prior to boiling.
Brewers Notes:
We brewed this for a friend's wedding, thus the name.
This brew was one of the few that was almost perfect, straight after primary fermentation (lucky for us!). Most require extensive bottle-aging or a secondary to remove off flavors. This one was just like Celis White. After sitting in the bottle for a few months, it actually turned into something that tasted a lot like an orange-wheat beer. There was a definite orange-juice note. The camomile tea also came though well, adding some nice sweetness, but the other spices were a bit lost in the complexity.
note: This is just slightly too dark to qualify for judging. Try extra pale dry malt extract.
