Brewers Notes:
7-7-01 Split batch of Double Enghien Blonde Ale clone. 5 Gallons WY1214, 5 Gallons DEBA recultured yeast. Areated with O2 from tank for 10 Sec per batch. Pitched at 3pm. OG 1.071
7-8-01 8am... both batches fermenting well !!! T=72F
7-9-01 DEBA yeast batch has really spacious foam.. wierd looking. Smells funky.
7-10-01 DEBA Yeast batch stopped fermenting. Pitched with 1214.
7-19-01 Racked both batches. Wy1214- 1.016 DE/wy1214 - 1.024. Not good.
7-31-01 Bottled Wy1214 only batch with 1.25 C corn sugar. Put in back of car to heat to 80F for 24hr, then in basement to bottle condition.. DEBA still bubbling... Added 1Cup 1214 starter to DEBA batch
8-8-01 SpGr down to 1.020
8-15-01 SpGr still at 1.020. Racked to corny and put in Beer Cellar (freezer).
8-20-01 bottled beer is very good. Bubblegum is a little too strong. Ferment at lower temp next time.
DEBA batch is bad. Vegitable smell and taste. Will have to dump.
