Additional Fermentation:

Grain Bill:

6.50 lbs. Pilsener, Franco-Belge Belgium
1.00 lbs. Wheat Malt America
0.50 lbs. Caramel Pils Malt Belgium
0.25 lbs. Aromatic Malt Belgium
0.50 lbs. Candy Sugar

Hop Bill:

1.00 oz. 4% Styrian Goldings Pellet @60 min
0.75 oz. 2% Strisselspalt Whole @15 min.

Mash Schedule:

153F for 60 minutes. (Next time I'll mash a little higher)

Brewers Notes:

2 dried lemons @30 minutes
.5 tsp Coriander @15 minutes
.75 tsp Sweet Orange @15 minutes
3 Cassia bark chips @10 minutes
.5 tsp Black pepper @10 minutes

This beer is cool. After the primary it will taste weird and bad because the spices will be fighting each other. Do not worry. They will make friends.

Let it smooth out at a cooler temp in the secondary for a couple of weeks.

Next time I will probably add some cardamom seed and substitute GOP for the Black Pepper.

Use the Frog Malt!
