Brewing Method: All Grain
Yeast: Recultured Yeast from bottle of Duvel
Yeast Starter: 1/2 gallon
Batch Size: 10 Gallons
Original Gravity: 1.082
Final Gravity: 1.009
Alcohol Content: 9.64 %
Total Grains: 28.25 lbs
Color: 6.4
Extract Efficiency: 75 %
Hop IBU's: 49.8
Boiling Time: 120 minutes
Primary Fermentation: 2 weeks @ 72F
Secondary Fermentation: 2 weeks @ 72F
Additional Fermentation: 4 weeks @ 72F

Grain Bill:

19.25 lbs Belgium Lager malt
1 lb Ireks Light Crystal
1 lb Belgium Aromatic Malt
4 lbs Corn Sugar-15 minutes
2 lbs Corn Sugar-Boiled added to secondary
1 lb Candi Sugar,Clear

Hop Bill:

4 oz Stryian Goldings-Pellet-5.25% AA-90 min.
0.50 oz Stryian Goldings-Pellet-5.25% AA-30 min.
2 oz Saazer-Whole-4.30% AA-15 min.
1 oz Stryian Goldings-Pellet-5.25% AA-5 min.

Mash Schedule:

150F for 90 minutes
Knock out-170F for 15 minutes
Sparge-170F-60 minutes.

Brewers Notes:

Boiled solution of 2lbs corn sugar secondary-1oz pear flavoring
recultured yeast from a bottle of Duvel
3787 Trappist to finish Tertiery(?) fermentation
After fermentation,Racl,and cold condition for 6 weeks @ 35F
Bottle w/1 cup corn sugar,add 2 eyedroppers 3787 to each bottle
Alternate yeast-1388,judas,3522,1214
