Yeast: 5 gallons-SB's Biere Du Corsaire,5 gallons Wyeast 1388xl,3787 Trappist in secondary
Yeast Starter: 1/2 gallon per 5 gallons
Batch Size: 10
Original Gravity: 1.085
Final Gravity:
Alcohol Content: %
Total Grains: 31 lbs
Color: 18.3
Extract Efficiency: 75 %
Hop IBU's: 17.1
Boiling Time: 2 hours
Primary Fermentation: 2 weeks @ 70F
Secondary Fermentation: 2 weeks @ 70F
Additional Fermentation: 4 weeks @ 70F w/3787 Trappist

Grain Bill:

1)19lbs DWC Pilsner malt
2)4lbs DWC Munich malt
3)1lb DWC Aromatic malt
4)4lbs Belgium raw wheat
5)1lbs Candi sugar,clear
6)1lb Candi Sugar,Dark
7)1lb Honey-Local bee-keeper

Hop Bill:

1) 1.50 oz. Perle-whole-8.25%AA-60 minutes.
2) 2.00 oz. Styrian Goldings-5.25%AA-15 minutes
3) 2.00 oz. Styrian Goldings-5.25%AA-5 minutes

Mash Schedule:

Acid rest,10 minutes 105F
Protein rest,15 minutes 122F
1st Saccarification,15 minutes 135F
2nd Saccarification,90 minutes 152F
Knockout 10 minutes 170F
Sparge 60 minutes 170F to collect 12 gallons....

Brewers Notes:

Cerritos water is so bad,I bought a RO unit.7.221 gal RO +
2.77 gall Cerritos water plus 0.34 tsp Epsome salt,0.824 tsp
chalk,0.765 tsp Calcium Chloride,0.659 tsp Gypsum..
