Mash Schedule:
Mash in at 124F for 30 min. ~ 18 quarts at 137F
Raise to 154F for 90 min. ~ 11.5 quarts at 212F
Mashout at 168F for 10 ~ 1 gallon 212F
Sparge at 168F to reach 8 gallons ~ 10 quarts
Brewers Notes:
Boil 90 min. Skim the kettle during the firt 30 min. Add 2 tsp of irish moss at 20 min.
Add 1/2 oz. of bitter Curacao orange peel at 15 min. Add 1/2 oz. of sweet orange peel at 15 min. Add 1/2 oz. of crushed coriander at 5 min. Add 1 tsp. of crushed cardamom and 1/4 oz. of crushed coriander at 0 min.
Dual yeasting is critical for this beer. Watch the activity of the 3944 in the primary and transfer to the secondary with a fresh starter of 3787 when the activity slows.
Prime with 1 cup of dextrose. Adding some fresh 3787 is a good idea. Give it several months to mellow and age. The flavor evolves with time.
Note - 1.076 is the target gravity. Leave out the cardamom if you don't like it or if you really want to make a Celis Clone. However, I am the Spice Bitch!
