Final Gravity: 1012

Color: 27.5
Extract Efficiency: 70 %
Hop IBU's: 159
Boiling Time: 90 minutes
Primary Fermentation: 7 days
Secondary Fermentation: 10 days

Grain Bill:

13# British two-row
1# Crystal 10L
8 oz Crystal 90L
8 oz CaraStan
8 oz Malted Wheat

Hop Bill:

1 oz Magnum Pellets 16.3% -first wort hopped (added to wort during the first runnings)
1 oz Chinnook Pellets 12.2% 75 minutes
1 oz Northern Plugs 10% 60 min
2 oz Cascade Whole Hops 4.8% 30 min
2 oz EK Goldings Whole Hops 2 min boil and 30 minute kettle cool down
2 oz Cascade Pellets dry hopped in secondary

Mash Schedule:

155 for 120 minutes

Brewers Notes:

I hopped about twice the amount called for by the style. When I tasted it initially, it was a little too sharp although had an awesome flowery aroma. After about 60 days in the bottle it was much different. Bitter but smooth, great nose, hi octane. I'm going to cheat it with some oak chips next time and call it IPA
