James Simpson's American Pale Ale

Ingredients for 5 Gallons:

Pale malt 9.0 Lb.
Munich malt 5.0 oz.
Caramel malt 0.5 Lb.
Victory malt 4.0 oz.
Flaked barley 0.5 Lb.
Northern Brewer's Hops 1.2 oz.
Fuggles Hops 1.0 oz
Goldings Hops 0.5 oz
Cascade Hops 2.0 oz
Gypsum 0.5 teas (add to mash)
Ale yeast

Procedure:

Mash in at 150 F, rest for 1 hour.
Raise temperature to 160 F and mash off
Sparge until kettle is full
Boil 60 minutes adding hops as follows:

At kettle full, 1.0 oz Northern Brewer's + 0.5 oz Fuggles. At KF + 30 mins., 0.25 oz Fuggles. At knock
out, 0.5 oz Golding's + 0.25 oz Fuggles + 0.2 oz Northern Brewer's.

Cool to 65 F, pitch Ale yeast
Ferment at 65-70 F
Dry hop with 2.0 oz Cascade for at least 2 weeks.
