Brewing Method: Extract
Yeast: Wyeast Scottish 1 large packet
Yeast Starter: None used, just activated packet
Batch Size: 5 Gal

Primary Fermentation: 5 days at 70F
Secondary Fermentation: 7 days at 70F

Grain Bill:
9 lbs light mlat extract
2 lbs Brown Sugar
1.5 lbs Crystal Malt
12 oz Roasted Barley
Hop Bill:
2 oz Cascade at start of boil
1/2 oz Cascade 50 mins into boil
Mash Schedule:
Steep Crystal Malt and Barley at 160F for 1/2 hour in five gal. water. Proceed to boil. At boil add brown sugar and extract. Boil for one hour, cool, then rack to primary fermenter.
Brewers Notes:
Add 2tsp gypsum at the start of boil.
