Primary Fermentation: 2 weeks@20Deg C
Secondary Fermentation: 4Months@20Deg C

Grain Bill:

5.5 Kg Pale Malt ( Joe Whites 3Ebc )
500g Munich1 ( Weyermann 20Ebc )
300g Crystal

Hop Bill:

45g Northern Brewer @ 7% A.A - 60 min
35g Fuggles @4.4% A.A - 15 Min
16g Goldings @ 4.2% A.A - 15 Min

Mash Schedule:

10 Min @ 20 deg C
15 Min @ 49 deg C
15 Min @ 61 deg C
25 Min @ 69 deg C

Brewers Notes:

100g Oak Chips added in last 15 min of boil
1 Tspn Gypsum in sparge water to stop leaching tannins
