Yeast: White labs American Hef.W.
Yeast Starter: 22oz
Batch Size: 5 gallon
Original Gravity: 1.050

Boiling Time: 60 minutes
Primary Fermentation: 7 days
Secondary Fermentation: 14 days @ 35F

Grain Bill:

6.6 lbs EDME Wheat MES 60/40 wheat/barley
1.0 lbs Rice Syrup

Hop Bill:

1.0 oz Saaz 60 minutes
1.0 oz Saaz 10 minutes

Mash Schedule:

Brewers Notes:

1 tbls Irish Moss 10 minutes
4 lemon pulps 10 minutes
4 zest of lemons 10 minutes
Put lemon pulp and zests in grain sacks. Transfer from kettle to primary after cooling of wort.

Ok, so I might not have handled the fruit the way you might, but this made a damn fine brew that was fun to taste again and again as it aged. I enjoyed this more than any commercial hef I have tasted.
