Brewing Method: All Grain
Yeast: Wyeast #3056 Bavarian Wheat
Yeast Starter: One liter
Batch Size: 5 US Gallons
Original Gravity: 1.057
Final Gravity: 1.010
Alcohol Content: 5.2 %
Total Grains: 20 Lbs.
Color:
Extract Efficiency: Very Shitty %
Hop IBU's:
Boiling Time: 90 minutes
Primary Fermentation: 5 days at 70 deg F
Secondary Fermentation: 7 days at 70 deg F
Additional Fermentation: Crash cooled between secondary and kegging for 24 hours

Grain Bill:

14 lbs Homemade amber malt
3 lbs Kasha Buckwheat Malteries Franco-Belges (bless you Masher!)
2 lbs Torrified Rice
2 lbs Buckwheat Honey (added at end of boil only!)
1 lb Flaked Maize
1 lb Muscovado Sugar (unrefined)
1 oz Amylase Enzymes (mash)

Hop Bill:

2 ounces Darren's Special Cluster's Last Stand 6.79%, 90 minutes
1 ounce Williamette 5.2%, 30 minutes remaining
1 ounce Williamette 5.2%, Steep during cooling

Mash Schedule:

Mashed in with 1.33 quarts of 170 deg F HL to achieve a protein rest of 140 deg F for 60 minutes. Raised temp to 152 deg F for 60 minutes, sparged with 171 deg F HL to acheive 7 gallons. Boiled off 1.5 gallons.

Brewers Notes:

Coolest beer I ever brewed. I have to add just a pound more Kasha next time, I suggest it. Unbeatable combo of #3056 and buckwheat. I am sure that you guys with real grains can cut back on the amber...mine is swine food...WHOOPS...no pigs here..I mean Lamb food!
