Brewing Method: All Grain
Yeast: White Labs California Ale
Yeast Starter:
Batch Size: 10 us gals.

Total Grains: 19-1/2 lbs.

Hop IBU's:
Boiling Time: 90 min
Primary Fermentation: 7 days 65-68F
Secondary Fermentation: 7 days 45F
Additional Fermentation:

Grain Bill:

16 lbs. 2 row pale
2 lbs. carastan 30-37L
1 lb carapils
1/2 lb red wheat

Hop Bill:

2-1/2 oz hallartaur 90 min.
1-1/2 oz cascade 5.5 20mins.
2 oz cascade @ finnish

Mash Schedule:

Mash at 153F for 90 mins. Sparge with 170F to make 13 gals.

Brewers Notes:

Boil 90 mins. cool with counter flow or immersion chiller.
After sec. fermentation I keg the beer leaving the yeast in the fermenter. I then dump the freshly cooled wort on top. Save $$$ on yeast. I artificially carbonate in the keg. Would like to know how this comes out when conditioned in a bottle. Enjoy!
