Grain Bill:

10 lbs British pale ale malt
1 lb carapils malt
1 lb crystal malt
1/2 lb torrified wheat

Hop Bill:

1 ounce fuggle hops 4.5% aa at 60 min
1 ounce kent golding 4.8% aa at 60 min
1/2 ounce fuggle 4.5% aa at 30 min
1/2 ounce kent golding 4.8% aa at 30 min
1/2 ounce fuggle 4.5% aa at 5 min
1/2 ounce kent golding 4.8% aa at 5 min

Mash Schedule:

mash all grains in 3.25 US gallons of water at 178 degrees treated with 1 tsp gypsum & 1 tsp calcium carbonate. Sparge with 5 US gallons of 180 degree water collect 6.5 gallons

Brewers Notes:

boil 75 min adding the hops at the schedule listed. Add 1 tsp Irish moss at 15 min. Force cool with counterflow wort chiller and pitch 1 vail of white labs San Fransisco lager yeast. ferment inb primary 10 days at 75 degrees then transfer to secondary and ferment at 45 degree adjusting the temp down from 75 to 45 over several days ferment for 20 days in secondary and bottle priming with corn sugar.
