Brewing Method: All Grain
Yeast: EDME Dry
Yeast Starter:
Batch Size: 10 gallons
Original Gravity: 1.055
Final Gravity: 1.012
Alcohol Content: 5.2 %
Total Grains: 17 pounds grains 4 lbs brown sugar
Color:
Extract Efficiency: %
Hop IBU's:
Boiling Time: 90 min
Primary Fermentation: 7 days @72 degrees f.
Secondary Fermentation: 3 weeks @ 48 degrees f.
Additional Fermentation: 14 days bottle conditioning

Grain Bill:

10# 2 row
2# cara munich
2# Aromatic
2# 40 L. Crystal
1/2# chocolate
1/4 lb. Black Patent
1/4 lb. Roast Barley
4 lbs Dark Brown sugar

Hop Bill:

2 oz German N. Brewer 7.2 aa at begining of boil
2 oz Cascades 4.4 aa 10 min before end of boil
1 oz cascades dry hop at secondary

Mash Schedule:

mash w 1 qt per pound grain 136 degrees to produce 124 degree protein rest for 30 min. Add sufficent water to raise to 156.f. Mash 90 min. sparge to produce 10 gal liquid boil, adding liquid to produce 10 gal wort. cool, pitch yeast.

Brewers Notes:

Fermentation started in 8 hours. Lasted 3 days. Uneventful process. A bit rough at 10 days in the bottle. Much better at three weeks. Excellent at 2 months.
