Running Cat Ale is our favorite pale ale. It is lightly hopped and just
right for enjoying with food or just sipping. This beer is basically an
extract brew with a few specialty grains tossed in. The hopping is
traditional ale except for the touch of Saaz at the end of the boil for
aroma. Enjoy.
Ingredients:
(For a five gallon batch)
3.3 lbs. John Bull light malt extract
2.0 lbs. Munton's light dry malt extract
0.5 lbs. Crystal malt (L40) (crushed)
2.0 oz. Roasted barley (not crushed)
1.0 oz. Kent Golding hop pellets (5% AA)
0.75 oz. Saaz hop pellets (2.2% AA)
1.0 tsp. Gypsum
1.0 tsb. Irish Moss
1.0 pkg Munton's Ale Yeast
Procedure:
1.Make a tea of the crystal malt and roasted barley. Fifteen minutes at 65-67 C.
(150 F.) in 1.5 - 2.0 quarts works well.
2.Sparge to the brewpot using about two gallons of 65-67 C. water.
3.Add extracts and boil for 60 minutes.
4.At start of boil add Kent Golding pellets (60 min., bittering).
5.At 50 minutes into boil add 0.5 oz. Saaz pellets (10 min., aroma) and Irish Moss.
6.At 55 minutes into the boil add 0.25 oz Saaz pellets (5 min., aroma)
7.Remove from heat and cool rapidly.
8.When wort is cooled to about 20-25 C (75 F.) pour into fermenter through a sieve
to remove trub. Aerate well.
9.Add sufficent water to make five gallons. Pitch yeast pre-hydrated in warm water
(20 C).
Primary fermentation: one week
Secondary fermentation: one week
Bottling: 1.0-1.25 cups light dry malt extract boiled for 15 min. in 1 qt water.
Conditioning: This beer needs at least three weeks in the bottle, although it is
good after one week.
